Restaurant owner, Juan’s, life has revolved around food for as long as he can remember. Growing up in California, his memories are of his mom and grandma always cooking. His family’s thing is carnitas. He remembers when his uncle, Francisco, or as the family knows him, “Pancho,” got the family recipe for the carnitas. His dad brought back a huge copper pot from the village in Mexico where their family is from and we would have barbecues on the weekends in Fremont, Calif., and cook piles of carnitas. There’s a lot of dishes on their menu that have their family’s story tied to it.
Other things that are important to Juan are cultivating an atmosphere where people want to come back — like coming home. “Like they are wanted here”.
